Let’s Try Some Green Cheese!

If you are intentionally choosing to reduce dairy products in your diet, or even if you just like a variety of yummy foods, check out this recipe for Green Cheese. Guess what? There is no cheese or dairy in it!

Ingredients:

  • 1 cup raw pumpkin seeds
  • Juice of 1 lemon
  • 2 cups cilantro or basil
  • 2 cloves of pressed garlic
  • ¼ to ½ teaspoon unprocessed sea salt
  • ¼ cup nutritional yeast
  • 4 tablespoons olive oil

Method:

  1. Soak pumpkin seeds overnight, drain and rinse well.
  2. Place all ingredients in a food processor or blender and process until creamy. The food processor will give a slightly coarser texture than a blender.

This yummy, cheesy flavoured spread brings lots of vitamins, proteins and good fats. Store in the fridge, or freeze for later use.
